The Perfect Day For A Chili Cook-off

Chili CookoffA few Sunday’s ago there was a crispness to the fall air. The morning was cool and the skies were blue. Autumn color painted the landscape and there was that sound in the background. The sound of NFL Sunday playing on one of the major networks. The tune you hum when you’re revved up to cheer on your home team hoping they’ll bring home a W! A simultaneous thought went through the minds of everyone in the household… CHILI!

Now we know there are TONS of great recipes out there and everyone has their favorite(s). Since merging households there were two recipes we were debating to make, so we did what anyone else would do. We made both for a chili cook-off!

One recipe was an old favorite of the family. The other was a spin-off from the 3-Bean Chili published in Men’s Health some time back

The verdict. It was a tie! We loved them both. The leftovers didn’t even last 2 days. SO, the next time we here the Dah-Dah-Dum-ta-da-Dah of the NFL sound, we are sure to be like Pavlov’s dogs, salivating for a bowl of body warming chili to compliment the chili air!

Here are the recipes we made:

Chili 1 – Perry’s Recipe

1 tablespoon olive oil
1 small onion, diced
1 pound lean ground turkey breast
2 14 1/2-oz cans diced tomatoes with jalapenos
2 14 1/2-oz cans no salt diced tomatoes
2 10-1/2 oz can chickpeas (no sodium), drained
1 10-1/2 oz can black beans (no sodium), drained
1 10-1/2 oz can low-sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon cayenne
1/4 teaspoon Rattlesnake Dust

In a large pot, heat the oil on medium-low. Add the onion and saute until soft (about 3 to 5 minutes). Add the turkey and brown it (about 5 minutes). Add the remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.

Chili 2 – Hilary’s Recipe

2 tablespoon of olive oil
1 pound extra lean ground turkey
1 cup chopped onion
2 garlic cloves minced
2 14 1/2-oz can diced tomatoes
1 cup tomato sauce
2 14 oz. cans of low sodium kidney beans rinsed and drained
2 tablespoons of chili powder
2 tablespoons of hot sauce (La Victoria)
1 teaspoon black pepper
1 teaspoon oregano

Heat oil in a large pan: saute onion, turkey and garlic until meat is browned

Add remaining ingredients. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes.

Dessert Time!

pumpkins and hay 7Crustless Pumpkin Pie

  • 1 12-oz pkg silken tofu
  • 1 cup pumpkin puree
  • 1 1-oz box sugar-free, fat-free vanilla instant pudding mix
  • 1 tsp pumpkin pie spice

Add all ingredients to a large bowl and blend until smooth.  Refrigerate before serving.

Ready in 1 hour – Makes 4 servings, 90 cals per serving

Pumpkin Pie Shakeology Bars
(recipe needs tweaking. Next time I’m following the shake recipe below along with oatmeal)

  • 1 scoop Chocolate Shakeology
  • 1 scoop chocolate whey protein powder (I’m going
  • 1 cup pumpkin
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup rolled oats, cooked and cooled

Combine all ingredients well and freeze for at least 90 minutes

Pumpkin Pie Shakeology

  • 1 scoop chocolate Shakeology
  • 1 cup rice, soy, almond, or low-fat milk (plain or vanilla)
  • 1/2 cup canned pumpkin, unsweetened
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • Ice (optional)
